grilled cheese, the one with the parmesan crust
Some nights the soup needs a friend.
Two slices of soft bread. Butter, soft enough to spread without tearing it. A melty cheese for the middle (young cheddar, or mozzarella with a little sharp tucked in). Grated parmesan, grated fine.
Butter the outside of both slices. Press the parmesan into the butter, both faces. That is the whole trick: the parm fries into a lacy golden crust while the middle goes soft.
Pan, low heat. Parmesan side down. Lid on. The lid traps the heat, so the cheese gives before the bread burns. Wait. Do not hurry it. When the bottom is deep gold, flip once, lid back on.
Out when both sides crackle a little and the middle feels collapsed and soft. Rest it a minute. Cut on the diagonal.
Then dip it in the pink soup while both are still hot. That is the whole night.
Small moves: soft butter, fine parm, low heat, lid on, rest before cutting.
